"I never, ever, ever go to the inside on a bigger guy. The reason is that if I cannot take him down immediately then he can probably throw his weight into the match and pin me in a heartbeat. To me a quick surge of backpressure is the only way to go. Finger attacks are the way to go. " - Mark Sidemore

"For bigger guys, my normal technique is good enough, toproll followed by the press. It is always a good idea to shake their hand when you meet your opponent to find out how strong they are." - Christian Greear

"The bigger they are, the harder they fall! My best discovery is that just because someone is big does not mean that he is also strong - or at least stronger than you are. I used to be shy about arm wrestling a "weightlifter" type who was seriously big, but not now because I have discovered that a big bench press doesn't mean [jack] in armwrestling. The best way to test this is when you are locking up with them. Give them a surge to the side or give them a surge in backpressure to test out how they respond. If you think that you are stronger than them, hit them with whatever you want because you will probably win. Even if it means you go inside then just do it. BUT if they are seriously stronger than you, it is risky to go inside and once you do so you are pretty much stuck there for the rest of the match. That is why if they are stronger it is much better if you find out before the match so that you can go outside and stay away from their strength!" - Noland Burke

I have found that if they have a bigger hand than you, toproll.  Otherwise, just throw down the hook.  This is a simple method that makes it so you don't make a mistaken judgment about their strength or ability.

Just because they have a big hand does not necessarily mean that you cannot hook them successfully.  Before you start the match, increase your sidepressure until it is at near maximum.  If their arm budges, then hook.  If not, then toproll - but only if you are a good toproller.  If your strength is the hook, it might be better to just go with what you are good at.

So why do you want to test them beforehand?  And also why do you want to toproll if you are weaker?  Couldn't you just rely on your speed to take them down?  I was under the impression that strength was important but only if you couldn't get a faster jump than them when the referee says go.  Pardon my ignorance, because I am still very new to all of this.

I think a Sweep might be good for a bigger guy. Assuming they have no experience. Theres no way a big guy with little or no A/W experience can with stand a powerfull sweep. If so go into a toproll and take him out. But the inital surge from the start is gonna play a big difference. So make sure to get a good Hit on him.

I have found it easiest to beat a bigger opponent by using a high post move. Even if you get stopped, you can apply alot of backpressure on the fingertips of your opponent. They will drop!!
